• 4 slices of Mozzarella cheese
• 2 medium tomatoes
• 1 bunch arugula clean and disinfected
• Parmesan cheese for grating
• 8 olives
• Basil clean and disinfected
• Olive oil, lemon, thyme, salt and pepper.
Cut the tomatoes into quarters and place in a pan with olive oil, salt, pepper and thyme. Bake in a medium oven for 15 minutes or until golden brown and remove. Book.
Prepare the dressing processing olive oil, salt, pepper and a few leaves of arugula.
Assemble the salad by placing the rest of the arugula, basil, mozzarella cut into small cubes, roasted tomatoes and olives. Gently mix.
Season with the dressing at the last minute, grate parmesan cheese on top. You can add diced bread toasted if desired.
